Black Bean Minestrone

From the “easy to throw it together” series...

In a medium pot, combine…
  • One can of diced tomatoes
  • One can of beef broth
  • A cup or so of black beans
  • A diced onion (sauteed)
  • About a cup of whole wheat pasta (shells)
  • Dried oregano (however much suits you)
  • Dried basil (the same)
  • About a tablespoon of prepared garlic (maybe less if it’s fresh-minced)
  • Black pepper
  • A splash of fish sauce
  • A splash of balsamic vinegar
Stir, bring to a boil, reduce heat to low, cover, and allow to simmer for twenty minutes.
